Spelt Beetroot Chocolate Orange Pancakes

As pancake day arrives again I thought I would share a really delicious and kid friendly version that my children adore.

It’s super easy and not much more effort than normal pancakes but has the added benefit of whole-grain spelt flour a bit of hidden veg, which also makes the pancakes pink. Who doesn’t love a pink pancake!

Spelt Beetroot Chocolate Orange Pancake Recipe

Prep 10 mins

Cook 15 mins

Ingredients 

Makes about 8 depending on pan size

100 grams of spelt flour

2 eggs

300 mls of milk

1 medium boiled beetroot (you can get these already boiled at the supermarket)

Pinch of salt

Splash of oil

Toppings

Cocoa nut butter spread/ Nutella

8 Clementines

Method

Step 1

Put all the ingredients excluding the beetroot into a large bowl and whisk together until smooth. Put aside about a quarter of the mixture and add the beetroot. Using your hand blender blend together until smooth, then add the beetroot mixture back to the rest of your batter and whisk until the two are combined.

Step 2

Set a medium frying pan over medium heat and add a spray or splash of oil.

Step 3

Ensure your pan is hot before adding your pancake mixture. Cover the base of the pan with a thin layer. When the edges start to brown and come away from the side it’s time to flip. Another 1 min on the other side and they are ready.

Step 4

Put on a plate and keep warm in a low oven until all the pancakes are ready.

Step 5 

Spread with your favourite cocoa nut butter or nutella, fill with clementine segments and roll.
